Raw Cashew Cheesecakes with Blueberry


If you ever had a raw cashew cheesecake you should know how delicate, rich and flavourful is it. The crust is made of walnuts, dates and salt, and the cashew/coconut cream filling has a hint of lemon and a blueberry swirl. The cakes are about a size of a muffin, which is perfect amount for consumption without feeling really guilty. These cheesecakes are frozen but thaw very fast (10 minutes) thus, for the bets results I wouldn’t leave them out of the freezer for a long time without a plan to consume shortly.
