This salad is light but filling. It has a crunchy texture and a whole lot of flavor. besides that it is a real powerhouse: spinach, beets and carrots help out with digestion while quinoa and edamame provide with needed protein. Snack or a main dish, you decide.
I’d recommend to add avocado and dress with olive oil/lemon juice/maple syrup/dijon mustard kind of concoction.
